The Iconic Lassi Stops of India
A first-hand trail across North India's most iconic lassi shops, from Amritsar and Delhi to Jaipur, Varanasi, Jodhpur, and Indore.
Lassi is a North Indian summer beverage made from yogurt. It is regularly made at home, and also at many shops across the country.
The better the quality of dahi (yogurt), the better the lassi. There are multiple variations depending on the city, and the differences are more interesting than you'd expect.
How the Lassi Changes
There are broadly three styles of lassi on this trail.
Amritsar, Delhi, and Jaipur have the most similar lassi. It's purely a beverage: yogurt churned until smooth, served in a large glass or kulhad, and topped with malai. All three cities taste close enough that I wouldn't say one is clearly better than the others. You can find excellent lassi in all three.
Varanasi is a different story. The lassi there is full of dry fruits, rabri, and malai, churned right in front of you. Rich, heavily dressed, almost a meal in itself. It's the most distinct lassi on the trail.
Jodhpur and Indore cross over into sweet dish territory. Much sweeter than the others, usually served in a small thick glass topped with white butter. I think of these as dessert more than a drink.
The main ingredient throughout is always the quality of malai and yogurt.
