A personal foreword by Yash Dixit on travelling India for food (the chaos), the reward, and why every hundred miles brings a completely different world.

I've travelled a lot through India and yet it seems like I've covered so little. I still have to travel more & more. I still have to go to places where I've already been, not just once again, but multiple times.

I'm not completely sure if I love India or not, but I am sure that it has everything a traveller, or in my case, what a gastronome needs.

Every hundred miles, in any direction, will give you a different language, a different attire, and most importantly, a different cuisine.

It's amazing how if you taste a good pyaaz kachori in Jodhpur, you won't find the same taste in Ajmer (which is about two hundred kilometers), but you will find a completely new taste in kachori. Keep going a few miles in any direction, you'll get a kachori or another dish, but in a completely different taste (but I'm sure it will be good).

India is an adventure, this I know for sure.

It's not for the faint hearted, things aren't safe, things aren't comfortable, and it's very overwhelming. You might meet amazing people, and you will meet scammers. But in the end you'll get through all those (maybe, as I said, it's an adventure) and will have an amazing meal, and I'm sure you'll love the meal.

I'm going to write about my experiences… in a very random way, very unstructured mostly. Let's see how this goes! Dive in….
