Kachoris of Varanasi
A slight let-down from expectations, but Varanasi has two distinct kachori types, the most chaotic queues in India, and its own charm. Rated 6/10.
A slight let-down from my expectations.
But there are two kinds of kachoris in Varanasi, badi kachoris (which are basically standard kachoris) and choti kachoris (small), crispy kachoris filled with either hing (asafoetida), dal, or potato.
Choti kachoris are usually served with kala chana subzi. Badi kachoris come with aloo & chane ki subzi.

All the famous places have chaos I have never seen anywhere else. The most chaotic kachori places are all in UP.
Usually the chaos enhances the eating experience (desperation sharpens hunger). But in my case, it almost worsened it.

Kachoris of Aligarh
Flat, large, slightly doughy inside, Aligarh kachoris are unlike anything else on the trail. Served with spicy aloo sabzi and raita, and weighted with personal memory. Rated 9/10.
